INGREDIENTS
1 packet Fatti's & Moni's Fusilli Pasta Screws
1 tsp each salt and pepper (optional)
1½ cup mayonnaise
2 tbsp mild curry powder
1 green bell pepper, diced
2 cups cherry tomatoes
½ red onion, finely chopped (optional)
Serving suggestion:
Chopped fresh coriander
Grilled chicken
METHOD
1. Prepare the Fatti's & Moni's Fusilli Pasta Screws by adding the pasta to a large pot of salted boiling water. Cook for 5-7 minutes until al denté. Strain the pasta and dish it onto a baking tray to cool for 15 minutes, ensuring the pasta does not stick together. *Chef’s Tip: You can also use leftover pasta!
2. In a large mixing bowl, combine the salt and pepper (optional), mayonnaise, curry powder, bell pepper, tomato and onion (optional). Add the cooled pasta and mix well.
3. Cover the pasta salad and refrigerate for at least an hour.
4. Transfer the pasta salad to a serving bowl and garnish with freshly chopped coriander. Serve as a delicious side and ENJOY!
