INGREDIENTS


1 bag (350g) mini cucumbers

2 tbsp Vital Health Foods Original Soy Sauce

3 tbsp white vinegar

2 tsp honey

1 tsp neutral oil OR chilli oil/crunch

Ā½ clove garlic, crushed (optional)


SERVING SUGGESTION:

Spring onion, sliced

Toasted sesame seeds


METHOD


1. Cut the cucumbers to your desired shape.

For sliced cucumbers:

Thinly slice the cucumbers into circles.

For smashed cucumbers:

Cut the cucumber lengthways, smash each half with a rolling pin and cut the smashed cucumber into bite size pieces.

For spiral cucumbers:Ā 

Place a chopstick on either side of the cucumber to hold it in place. Use a knife to cut the entire length of the cucumber at a 45Āŗ angle. Flip the cucumber over a cut the other side at a straight angle, creating a long spiral. Repeat this for each cucumber.


2. Place the cucumber in a large maison jar or container. Add the Vital Health Foods Original Soy Sauce, vinegar, honey, neutral or chilli oil/crunch and optional garlic. Close the jar with a lid and shake until well combined. *Chefā€™s Tip: Add your protein of choice for an easy meal-prep lunch!


3. Empty the contents of the jar into a serving bowl. Garnish with sliced spring onion and toasted sesame seeds and ENJOY!
