INGREDIENTS
For the berry filling:
2 cups frozen mixed berries
½ tsp ground cinnamon
2 tsp cornflour
For the crumble dough:
2 medium bananas
½ cup (125g) melted butter
½ cup (51g) rolled oats
⅓ cup (41g) cake flour
2 cups (160g) Kellogg’s® Rice Krispies Vanilla Flavour
METHOD
1. Preheat the oven to 180°C and line a 20cm square baking tray with baking paper.
For the berry filling:
2. In a small pot over medium heat, add ½ a cup of water, the frozen berries, ground cinnamon and cornflour. Allow the berries to simmer until softened, about 10-12 minutes or until a thick, pouring consistency has formed. Stir every couple minutes to ensure the berries don’t burn.*Chef’s Tip: Swap the mixed berries for plain blueberries, if preferred.
For the crumble dough:
3. In a medium-sized bowl mash the bananas using the back of a fork. *Chef’s Tip: We used 200g of bananas in testing.
4. Add the melted butter, oats, cake flour and stir to combine until a dough forms. Add the Kellogg’s® Rice Krispies Vanilla Flavour. Stir gently, ensuring the Rice Krispies are not crushed.
To assemble:
5. Add ⅔rds of the crumble dough to the bottom of the prepared baking tray. Pressing down slightly until a smooth layer has formed. Bake this layer for 8-10 minutes or until slightly golden. *Chef’s Tip: Baking this layer makes the bars crispy.
6. Spread the cooled berry filling onto the baked crumble layer.
7. Sprinkle the remaining crumble dough over the berry layer. *Chef’s Tip Sprinkle over extra Kellogg’s® Rice Krispies Vanilla flavour if preferred.
8. Bake the crumble for a further 10-15 minutes or until golden brown.
9. Allow the baked crumble to cool for 5 minutes. Using a sharp knife, cut the cooled crumble into 10 medium-sized bars.
10. Serve as a snack time treat or store in an airtight container until ready to ENJOY!
