Chicken & Cheese balls



Makes 16

INGREDIENTS

1 packet (145g) Doritos Cheese Supreme Flavoured Corn Chips

2 cups cooked shredded chicken breast

1 cup grated cheddar cheese, plus 16 1cm cubes

½ cup mayonnaise

½ tsp each salt and pepper, to season

2 eggs, beaten

Serving suggestion: Parsley

Dipping sauce, of choice

METHOD

1. Preheat the oven to 180ºC and line a baking tray with baking paper

2. Open a small corner of the Doritos Cheese Supreme Flavoured Corn Chips to release the air in the bag.

3. Using a rolling pin, carefully bash the chips into coarse crumbs.

4. In a large mixing bowl, add ⅓ of the crushed chips along with the chicken, cheese, mayonnaise and salt and pepper. Mix the ingredients until well combined and a stiff sticky mixture is formed.

5. Using your hands, create 16 flat disks with the mixture. Add a block of cheese to the centre of each disk and carefully enclose the cheese with the mixture. *Chef’s Tip: Lightly grease your hands beforehand for easy rolling!

6. Roll the mixture into 16 perfect balls and place on a plate.

7. Sprinkle the remaining crushed chips onto a large plate and add the beaten eggs to a wide bowl.

8. Carefully coat each ball in the egg mixture before rolling through the crushed chip crumbs to form the crunchy exterior.

9. Add the balls to the prepared baking tray and bake for 12-15 minutes or until the cheese has melted and the crumb is golden brown and crispy. *Chef’s Tip: Alternatively, air fry if preferred!

10. Arrange the balls on a platter, garnish with freshly chopped parsley, serve with your favourite dipping sauce and ENJOY!
