Chocolate Milk Sponge Cake

INGREDIENTS


½ cup (65g) Nestlé KLIM Full Cream Instant Milk Powder 

1 cup (125g) cake flour

¾ cup (80g) Nestlé Cocoa Fat Reduced Cocoa Powder

1 tbsp baking powder

4 large eggs, at room temperature

1 cup (200g) brown sugar

1 tin (385g) Nestlé Full Cream Sweetened Condensed Milk

1 cup (240g) whipping cream, cold

METHOD


1. Preheat the oven to 180°C and grease a 20cm baking dish. Add the Nestlé KLIM Full Cream Instant Milk Powder to a measuring jug with 3 cups of hot water and whisk until well combined. Set aside until needed. 


2. In a medium bowl, whisk together flour, ½ cup Nestlé Cocoa Fat Reduced Cocoa Powder and baking powder. In a separate large bowl, beat the eggs and sugar together until light and fluffy, about 5 minutes. Add ½ cup of the Nestlé KLIM Full Cream Instant Milk Powder mixture and mix until combined. Gently fold in the dry ingredients, being careful not to overmix. 


3. Pour the batter into the prepared baking dish and bake for 50-60 minutes. *Chef’s tip: oven temperatures vary, check the doneness of the cake by inserting a toothpick into its center. If the toothpick comes out clean, the cake is baked 


4. In a measuring jug, whisk together 1 tin of Nestlé Full Cream Sweetened Condensed milk, 2 ½ cups of the Nestlé Klim Full Cream Instant Milk Powder mixture and 2 tablespoons of Nestlé Cocoa Fat Reduced Cocoa Powder, until smooth. Using a fork, poke holes all over the cooled sponge cake. Slowly pour the chocolate soak over the entire cake, ensuring it absorbs the liquid evenly. Refrigerate the cake for at least 2 hours, or overnight, for the best results. 


5. In a large mixing bowl, whip the cold cream until soft peaks form and add 2 tablespoons of Nestlé Cocoa Fat Reduced Cocoa Powder. Continue whipping until stiff peaks form. 


6. Spread the cocoa cream over the soaked cake evenly and garnish with extra cocoa powder. 


7. Slice the cake into squares, serve and ENJOY!
