INGREDIENTS
For the flapjacks:
¼ cup NESTLÉ KLIM Full Cream Instant Milk Powder
1 large egg
1 cup (113g) self raising flour
For the creamy chicken filling:
1 tbsp margarine
1 tsp crushed garlic
1 tbsp cake flour
1½ tbsp NESTLÉ KLIM Full Cream Instant Milk Powder
1 cup rotisserie chicken, shredded
¼ tsp each salt and pepper to season
Serving suggestion:
Thinly sliced spring onions
METHOD
For the flapjacks:
1. In a large mixing bowl, whisk the NESTLÉ KLIM Full Cream Instant Milk Powder together with 1½ cups of water until combined.
2. Add the egg and sieve in the flour. Whisk together until the mixture is smooth and lump-free.
3. Carefully pour the flapjack batter into a clean squeezy bottle.
4. Grease a large non-stick pan over medium heat.
5. Squeeze dollops of batter into the pan that are roughly 4.5cm in diameter. Cook the flapjacks for 10-20 seconds. Flip and cook for another 10-20 seconds. Repeat with the rest to make 48 mini flapjacks. If prepping ahead, place the flapjacks in an airtight container and refrigerate for up to 3 days. Re-heat before using.*Chef’s Tip: They’re ready to flip once bubbles appear on the surface!
For the creamy chicken filling:
6. Melt the margarine in a small pot over medium heat. Add the garlic and fry for 30 seconds.
7. Add the flour to the pot and whisk to combine. Remove the pan from the heat.
8. Add the NESTLÉ KLIM Full Cream Instant Milk Powder and 1 cup of hot water to the pot and whisk to combine. Place the mixture back on the heat and cook for 3-5 minutes, whisking regularly until thickened and lump-free.
9. Remove the white sauce from the heat and stir in the chicken. Season to taste with salt and pepper.
10. Add a teaspoon of creamy chicken filling to 24 of the flapjacks. Add another flapjack on top of each and secure with a mini skewer.
11. Garnish the creamy chicken flapjack bites with a sprinkling of chopped spring onions and ENJOY!
