Crispy Potato Salad




Serves: 12Ā 

Hands-on time: 10 minutes


INGREDIENTS

1 bag Layā€™s Potato Chips Italian Truffle & Garlic Flavoured

Large handful finely-chopped fresh basil leaves, plus extra for servingĀ 

Ā½ cup mayonnaiseĀ 

Ā¼ cup roasted peppers, roughly chopped

10 slices cold cuts of choice, chopped]

1 cup cheese of choice, cubed

Ā¼ cup green olives, pitted

Ā½ cup grated Parmesan cheese (optional, for serving)


SERVING SUGGESTION:

Fresh basil and parmesan cheese



METHOD

  1. Add the Layā€™s Potato Chips Italian Truffle & Garlic Flavoured to a large serving bowl and set aside.Ā 

  2. Finely chop the fresh basil leaves and mix them with the mayonnaise and 1 tsp of water to make your basil mayo. Set aside.

  3. Roughly chop the roasted peppers and cold cuts.

  4. To the chips, add the cheese of choice, chopped peppers, cold cuts, green olives, fresh basil, grated Parmesan cheese (if using) and basil mayonnaise.Ā 

  5. Toss until well mixed, garnish with extra basil and parmesan, serve immediately and ENJOY! *Chefā€™s tip: serve immediately and toss the Lays in just before serving
