Ginger Sesame Chicken & Rice Tray Bake

INGREDIENTS


8 skinless chicken thighs, on the bone

½ cup Vital Health Foods Ginger & Sesame Flavoured Soy Sauce, plus extra to serve

2 tbsp honey

2 tbsp vinegar

2 cloves garlic, crushed

1 cup white rice, washed

2 cups chicken stock


SERVING SUGGESTION:

Toasted sesame seeds

Spring onion, sliced

Coriander leaves

Lime wedges

Sautéd Asian vegetables, of choice


METHOD


1. Preheat the oven to 180°C and grease a large rectangular baking dish.


2. In a large mixing bowl, add the chicken thighs, Vital Health Foods Ginger & Sesame Flavoured Soy Sauce, honey, vinegar and garlic. Mix until the chicken thighs are coated in the marinade. *Chef’s Tip: Use the chicken immediately or cover and marinade in the fridge overnight!


3. Pour the rice into the baking tray along with the stock and stir to combine.


4. Place the chicken pieces over the rice and stock along with the marinade. Cover the baking dish with foil or a lid. *Chef’s Tip: Covering ensures the rice cooks through perfectly!


5. Bake the chicken and rice for 45 minutes. Remove the foil or lid and bake uncovered for a further 15-20 minutes until golden brown and all the liquid has been absorbed. Once cooked, use a fork the fluff the rice.


6. Garnish with toasted sesame seeds, spring onion, coriander, lime wedges and an extra dash of soy sauce. Serve the dish with sautéed Asian vegetables and ENJOY!
