INGREDIENTS
â cup (215g) Natureâs Choice Crunchy Peanut Butter
â cup honey
6 tbsp (84g) margarine
3 cups (250g) medium desiccated coconut, plus extra to decorate
3 tbsp (20g) cocoa powder
2 tbsp The Harvest Table Pure Collagen Powder
Serving suggestion: Mixed berries

METHOD
1. Line an O2 Bake Non-Stick Cookie Pan with Ibili Accesorios Oven Proof Paper.
2. In a large heatproof bowl, microwave the Natureâs Choice Crunchy Peanut Butter, honey and margarine on high in 30 second intervals until smooth. *Chefâs Tip: For a peanut-free version replace with any other nut butter!
3. Add The Harvest Table Collagen Powder, coconut and cocoa powder and mix to combine.
4. Spoon 24 portions out onto the lined tray. Press each cookie ball with the bottom of a glass dipped in water, to flatten. *Chefâs Tip: Use an ice cream scoop to evenly portion out the cookies!
5. Decorate the cookies by sprinkling some extra coconut on top.
6. Refrigerate for 2 hours until firm.
7. Serve the collagen cookies with mixed berries on the side for a healthy snack and ENJOY!
