INGREDIENTS
For the cookie dough:
2 cups Kellogg’s®️ Mash-Up Cereal
1 packet (650g) store-bought cookie premix (see our pinned comment for a simple cookie recipe if you can't find premix)
¾ cup (170g) margarine, at room temperature
1 large egg
For the filling:
1 tub (400g) store-bought cream cheese icing
For the glaze:
1 cup (115g) powdered sugar
To finish:
2 cups Kellogg’s®️ Mash-Up Cereal, finely crushed
METHOD
1. Place the Kellogg’s®️ Mash-Up Cereal in a ziplock bag and use a rolling pin to crush the cereal until it turns into fine crumbs.
2. In a medium-sized bowl, add the margarine and beat until light and fluffy, about 4 minutes.
3. Add the egg and beat until combined, then add the cookie premix and the crushed cereal. Beat until the mixture just comes together. Use your hands to form the dough into a ball and set aside. *Chef’s tip: be careful not to overmix!
4. Refrigerate the dough for 30 minutes. Preheat the oven to 180°C and line a large baking tray with baking paper.
5. While the cookie dough chills, make the glaze by adding the icing sugar and 2 tablespoons of water to a small bowl and whisking until combined. Set aside until needed. *Chef’s tip: alternatively, use honey!
6. Divide the cookie dough into 26 evenly sized balls, about 3 tablespoons per cookie dough ball.
7. Place the cookie dough balls onto the prepared baking tray, ensuring they are evenly spaced out, and bake for 8-10 minutes. After baking, allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a cooling rack to cool completely. *Chef’s tip: the cookies are ready when they start to lightly brown around the edges
8. Use a fork to dip all the cooled cookies into the glaze, followed by coating them in crushed Kellogg’s®️ Mash-Up Cereal. Place a generous amount of filling between two cookies, using a spoon, to create a sandwich. Repeat this process until the cookies and filling are finished.
9. Serve immediately and ENJOY!
