METHODā£ā£

1. Add the butter, white sugar and brown sugar to a large mixing bowl. Using an electric beater, cream the sugar and butter until pale and airy. Add the egg and whisk until combined.ā£ā£
2. In a separate bowl, whisk together the flour, cocoa and bicarbonate of soda. Gradually add the dry ingredients to the wet and mix with the electric beater until combined. Add the milk and beat until combined.ā£ā£
3. Roughly chop the Safari Almonds Raw and Safari Seedless Raisins. Add them to the dough along with the chocolate chips and mix with the beater until evenly distributed. Cover the dough and refrigerate for 3 hours, or overnight if prepping ahead. *Chefās Tip: refrigerating the dough allows the flour to hydrate completely and prevents to cookie from spreading too much in the ovenā£ā£
4. Once chilled, remove the dough and allow it to stand for at least 20 minutes for easy handling.ā£ā£
5. Preheat the oven to 180ĀŗC on fan-assist and line a baking tray with baking paper.ā£ā£
6. Divide the dough into 20 balls, about 1Ā½ tablespoons in size. Place the balls, 8 at a time, spaced out on the baking tray. ā£ā£
7. Bake for 9 minutes. Remove the tray from the oven and use the base of a glass to gently flatten the cookies. Place 3-4 mini marshmallows on each cookie and bake for 2 minutes until the marshmallows soften and stick to the cookies.ā£ā£
8. Transfer the cookies to a wire rack to cool completely while baking the second and third batch of cookies.ā£ā£
